Dandelions restore energy and vitality after the hardships of winter. They are a blood purifier full of vitamins and minerals. Young leaves and flowers are eaten fresh. Older leaves are cooked to reduce bitterness. Roots can be made into a caffeine-free tea that is similar to coffee. The leaves and flowers are boiled together and applied as a poultice that reduces arthritis.
